Meal planning saves me every time. Those days I don’t have a plan? I find myself scrambling late in the day to get food on the table before everyone is starving to death.

In our household, we’re vegetarian. In fact a large majority of our extended family is vegetarian as well. Sometimes I make vegetarian dinners that are straight up classic vegetarian or naturally vegetarian. However, sometimes I take recipes that call for meat and replace the meat with something vegetarian.

Easy Meal Planning eBook

With a house full of kids, some of which have a few picky eating issues, a husband who works all day, plus all those after school activities keeping us out late, figuring out what we’re going to have for dinner can turn into a trip to the fast food drive thru.
