The first time I had this Western breakfast casserole, I was immediately hooked. It is one of those recipes that you can make the night before and store in your refrigerator until morning. When it’s finally time to eat, all you need to do is pop it into the oven for 45 minutes to an hour and then enjoy!

A perfect dish for any breakfast or brunch or even a holiday meal, an egg casserole is guaranteed to get you out of bed in the morning with a smile on your face!

Last year, it was Christmas morning and I started off the morning by making coffee and hot cocoa for everyone.

After we opened all of our presents, everyone joined me in the kitchen, they each made their own plates. Then the whole family gathered around the table for breakfast. I had made this delicious, easy Western Breakfast Casserole because it was so easy for me to prepare. I loved being able to just enjoy time with each other.

Ingredients Needed for Western Breakfast Casserole

  • 1 bag (20 oz) frozen hash browns, thawed
  • 1 red pepper, diced
  • 12 eggs
  • 1⁄2 cup milk
  • 1 can (4 oz) diced green chilies
  • 2 cups shredded cheddar cheese
  • ½ tsp chili powder
  • ½ tsp cumin
  • salt and pepper

Western Breakfast Casserole

Ingredients

  • 1 bag (20 oz) frozen hash browns, thawed
  • 1 small onion, diced
  • 1 red pepper, diced
  • 12 eggs
  • 1⁄2 cup milk
  • 1 can (4 oz) diced green chilies
  • 2 cups shredded cheddar cheese
  • ½ tsp chili powder
  • ½ tsp cumin
  • salt and pepper

Instructions

  1. Preheat the oven to 350 degrees. Grease a 9 x 13 baking dish with cooking spray.
  2. Add hash browns to the bottom of the dish and sprinkle with salt and pepper to taste.
  3. Sprinkle the onion and red bell pepper over the hash browns potatoes.
  4. Add half the green chiles and about half of the cheese to the top, spreading evenly.
  5. In a bowl, mix the eggs, milk, chili powder, cumin, and remaining green chiles.
  6. Pour over the potato and vegetable mixture, then sprinkle to top of the casserole with the rest of the cheese.
  7. Bake casserole at 350 degrees for 45-55 minutes. Check for doneness by inserting a knife in the center.
